Filling soup recipes can be a challenge to find but this one is protein packed and totally fits the bill! At its base level this is an easy and inexpensive soup to make, and how wild with it you go depends entirely on you. Sometimes I make combinations that just sound good; others I go with themes like “cheap”, “vegetarian”, “tropical” or “complete meal”!

One of the things that can be tough about meal prepping is the repetitiousness. Eating the same thing at the same time every day is a sure-fire way to deviate from your plan. One of my favorite ways to alleviate this problem is with swappable toppings! Using this Jerk Spiced Black Bean Soup as a base, you can create a litany of different flavors every day. Here are a few tested and excellent choices:

Ingredients

For Soup:

  • 1 cup (1/2 lb) dry black beans, soaked overnight
  • 1/4 cup olive oil
  • 4 celery stalks, diced
  • 2 carrots, diced
  • 1/2 yellow onion, diced
  • 9 cups (72 fl oz) chicken broth
  • 1 tbsp jerk seasoning
  • 2 tsp chile powder
  • 3 tsp garlic powder
  • 1/2 tsp allspice
  • 1 tbsp lime juice
  • salt to taste

Topping ideas:

Instructions

  1. Be sure to soak your dry black beans at least 8 hours before you begin

  2. Heat olive oil in a large soup or stock potover medium heat. Add diced celery, carrots and onions. Cook for 15-20 minutes, stirring occasionally, until beginning to turn translucent.

  3. Add soaked black beans, chicken broth, jerk seasoning, chile powder, garlic powder and allspice to the pot. Bring to a boil.

  4. Cover the pot and lower heat to simmer. Simmer until beans are soft, about 2.5 - 3.5 hrs.

  5. Remove from heat and let cool a little. Blend half of the beans and liquid in a blender or food processor. Return to pot and stir together with the lime juice.

  6. Garnish with as many toppings as you would like and serve!
