At its base level this is an easy and inexpensive soup to make, and how wild with it you go depends entirely on you. Loaded Jerk Spiced Black Bean Soup (+ meal prep!)

Ingredients
For Soup:
- 1 cup (1/2 lb) dry black beans, soaked overnight
- 1/4 cup olive oil
- 4 celery stalks, diced
- 2 carrots, diced
- 1/2 yellow onion, diced
- 9 cups (72 fl oz) chicken broth
- 1 tbsp jerk seasoning
- 2 tsp chile powder
- 3 tsp garlic powder
- 1/2 tsp allspice
- 1 tbsp lime juice
- salt to taste

Instructions

Be sure to soak your dry black beans at least 8 hours before you begin

Heat olive oil in a large soup or stock potover medium heat. Add diced celery, carrots and onions. Cook for 15-20 minutes, stirring occasionally, until beginning to turn translucent.

Add soaked black beans, chicken broth, jerk seasoning, chile powder, garlic powder and allspice to the pot. Bring to a boil.

Cover the pot and lower heat to simmer. Simmer until beans are soft, about 2.5 – 3.5 hrs.

Remove from heat and let cool a little. Blend half of the beans and liquid in a blender or food processor. Return to pot and stir together with the lime juice.

Garnish with as many toppings as you would like and serve!
