These oatmeal triple chip cookies are loaded to the brim with chocolate, white chocolate, and butterscotch chips!

This is basically the only chocolate chip cookie recipe that my family has made for all of my life. That said, recent events have made posting this recipe a thing of greater necessity! In what will no doubt go down in our family history as another Incident, the only copy of this recipe made an attempt to exit the space-time continuum. I wasn’t there to personally witness, but my understanding is that mom was in the middle of making them when the damn thing just up and walked off.

So the house was torn apart- dishes and housewares flying- in an attempt to find it. Not between any crevices, not stuck underneath a jar, nowhere.

At this point, and with admittedly a little panic, my mom texted me to see if I had a copy floating around. I’ve made these cookies a gazillion times and I should definitely have the recipe somewhere, but I came up empty. Panic increased.

Now fortunately there is a happy ending to this tale. In the temporary sense, my aunt (shoutout to Sandy!) was able to find a copy of the recipe- after a few days. In the macro sense, a few months passed before my mom’s actual physical copy reappeared- somehow stuck to a bag of peas in the bottom of the freezer.

The moral of this story, obviously, is the need to commit precious documents to the digital age… so that the day never arrives where it is imperative that you make oatmeal triple chip cookies and your recipe ends up stuck to a bag of peas.

Otherwise, this is a pretty straightforward cookie recipe. The only thing that bears mentioning is something I always like to say whenever flour is one of my ingredients. Make sure you are properly measuring your flour! It took me an embarrassingly long amount of time to discover this. Check out all of the intel on The Spruce here. The long and short: don’t just use your measuring cup to scoop out the flour from the bag. Use a spoon to scoop it instead, and shake as you pour into the measuring cup. This is the way to end up with an accurate measurement!

Oatmeal Triple Chip Cookies

These oatmeal triple chip cookies are loaded to the brim with chocolate, white chocolate, and butterscotch chips!

Course Dessert, Snack

Ingredients

  • 1 cup shortening (Crisco)
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups rolled oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup butterscotch chips

Instructions

  1. Preheat oven to 375 degrees.

  2. In a medium mixing bowl, cream together the shortening, white sugar, brown sugar, eggs and vanilla.

  3. Sift the flour, baking soda and salt into the bowl. Fold into the shortening mixture until just incorporated.

  4. Stir in rolled oats, semisweet chocolate chips, white chocolate chips, and butterscotch chips. Fold until all ingredients are incorporated.

  5. Form into small balls and place on ungreased cookie sheet. Bake for 9-12 minutes.
