An unbelievably delicious snack option, these vegetable ranch bars feature crescent rolls, cream cheese, ranch and a perfect crunchy vegetable garnish. This recipe is always a crowd pleaser!

This recipe is somewhat of an anomaly for me because I rarely cook with this many convenience foods. But damn it if they aren’t delicious! This recipe was given to my mom by a work friend sometime in  the 90s or early 2000s when convenience foods roamed the earth.

This recipe was resurrected several years ago, when I suddenly remembered them while trying to think of creative vegetable recipes. Unfortunately…the vegetables are mostly the garnish of a vessel designed primarily to deliver cream cheese and ranch into your mouth. So not the health food I was hoping for.  Calling them vegetable ranch bars may even be something of a misnomer. But after we made them again, they became a MANDATORY part of any holiday gathering. I’m eating one right now.

You can use any combination of chopped vegetables you would like, which makes this a great “sweep the fridge” recipe. I do recommend that most of your veggies be crunchy ones though, as the texture really makes this recipe pop. For the ones shown in these pictures, I used red bell pepper, radish, onions, purple carrot and broccoli. But some other favorite options include cauliflower, shredded Brussels sprouts, mushrooms or broccoli / alfalfa sprouts.

The ratio of vegetables you use doesn’t really matter. Just make sure you end up with about a cup and a half. And be sure to dice them fine! When I make these at my parents house, I use one of those little slap-chop contraptions.

These little bars make great appetizers or snacks. Alternatively, you can just do what we do in my house- slowly sneak them one-by-one from the refrigerator without telling anyone. Your choice!

Cook Time 10 minutes
Resting Time 30 minutes

Ingredients

  • 2 8-oz packages crescent rolls
  • 16 oz cream cheese
  • 3/4 cup mayonnaise
  • 1 .4 oz package ranch seasoning mix
  • 1 1/2 cup finely diced mixed vegetables of choice, such as red pepper, radish, bell pepper, broccoli, cauliflower, mushroom etc.
  • 3/4 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350.

  2. Keeping them attached to each other, spread crescent rolls evenly on a 15 x 10 baking sheet to form the crust. Bake for 8-10 minutes or until golden brown. Let cool completely.

  3. Fine dice your vegetables until you have about a cup and a half. Beat together the cream cheese, mayonnaise and ranch seasoning packet in a medium bowl.

  4. Spread cream cheese mixture evenly over the cooled pan of crescent rolls. Sprinkle evenly with chopped veggies and shredded cheese. Lightly press the toppings into the cream cheese. Place in the refrigerator for at least 30 minutes.

  5. Cut into even squares and store covered in the refrigerator for up to a week (if they last that long!)
